Maybe she still is carrying out her husband's lineage but just with her surname because she kept it through her marriage. But Baratheons are all extinct so it makes no sense for the sigil to exist on there. It irks me how the four sigils that surround the title are still Stark, Lannister, Baratheon and Targaryen.. I'm thinking that because she married a Baratheon, no matter what she declares herself as or what banner she hangs in the throne room, by all technicalities a Baratheon sits on the Iron Throne? That's why they left it as that? I don't think the show foreshadows that much? But if they are foreshadowing then that means Gendry gets the throne after her? But wouldn't she try her best to change that considering the fact that she knows Joffrey wasn't able to kill all of Robert's Bastards who could in the future have a claim to the throne? Difference is Cersei is in the throne for all season 7 or even to the 8th as well. If Kings Landing are under Lannister, they will definitely changed it. When Theon took over Winterfell, it doesn't necessary to do that cos he didn't have it for long time. Cersei is still known as Baratheon widow by most civilian and Cersei play under that cover well to manipulate its people. Hence it is still a stag on the opening credits.
