I always thought she just pronounced "poker" differently. More like "pucker" the second time around. Made sense because singers often modify vowels. If you listen closely, it is indeed a "p". If she did intend to say "**** her face" she probably kept the 'p' to not have to go through Explicit certification stuff. Or as I think, she is just saying poker face but with a modified vowel (from 'o' to 'u').

Edit: It also maintains rhythm if she pronounces it like pucker because then it sounds like: Pa Pa Pa Pa-ker face. God knows why she would only do it the second time around though.

I tell everyone this all the time lol. Because I think it's such a badass move, which goes to prove that she was a pop-rebel bad kid right from the start! She let it hit radio stations all around the world knowing that she was saying "f.uck her face", which would have been controversial for many reasons back then, and it was only her second single ever!

Also for anyone wondering the "fart" noise in PI is just the saliva in her mouth squelching from probably not swallowing saliva before she sang or because she probably sang for a while without taking a breath
