White was established as a universal wedding color of the western world in the 1800's. It was a symbol of wealth because white fabrics could get stained extremely easily and there were little to no facilities where you could properly clean white laundry. Up until the 1930's it was still common for lower-class people to marry in black and red, especially in the countryside where infrastructure and technical advancments arrived centuries later. My grandma still married in black for example. The white = innocence stereotype is a product of advertising and the influence of the church and wasn't really a thing back in the day like it is today.
