Also, no hate because I know shakira CAN sing but it always bugs me that she never seems to sing live at these types of performances (I've never seen her live though and wish I could see vids from people's phones during these kind of shows.. because maybe it is just how they mix the audio)

These types of performances are often from tape to ensure that nothing unexpected happens on the live broadcast. Its all about having that perfect one take.
