I don't think it's all that surprising tbh. 

Disney films (and Pixar too) have a cross generational appeal. They're not just cartoons, they're fully fleshed out stories that deal with complex themes and ideas and are incredibly stimulating whereas your Dispicable Me's and Sing's of the world are very shallow, surface level, throwaway entertainment. Because the movies themselves are pretty rich, the music associated with them tends to be as well.

Disney soundtracks (not all but most) feature a lot of really musically diverse and interesting songs that work fine as just songs when taken away from the context of the film. Encanto's soundtrack can play just like a regular album because it's made like one, so it's pretty easy to stream it just like any other album.
