Because it's interesting to see/hear all the different parts isolated and to remix them. Gaga loves to play with background vocals/harmonies and sometimes these vocals are much better than the actual lead vocals. Cutting/adding stems from a song can make a huge difference in the final sound and overall it's just fun to play around with them.
