ctherainbow 3,162
My family always grew up eating meat, because my dad is the kind of guy who HAS to have red meat with every meal(despite a history of heart problems in his family ), but my mom is primarily a vegetarian, and also an animal rights activist. I definitely want to try transitioning to a largely meat-free diet, though like some other members, I'm not sure if I can give up meat completely. My biggest dilemma is the lack of guidance that I've found on how to be vegetarian on a tight budget; maybe I'm just looking in the wrong places, but I was wondering, @Anastasia, if you could PM me some resources of cheap vegetarianism, since you seem to be very knowledgeable on this subject. Thanks! I'm talkin' 'bout forever, baby.

But couldn't live without milk products and eggs, see I'm italian and a pastry chef.. can I breed a couple of chickens to make me some eggs? I swear I won't beat them Actually you can use chickpea water (for example from canned chickpeas) as egg replacement. People say it works like it. Click here: https://www.wired.com/2016/05/mysteries-chickpea-water-magical-substitute-eggs-no-really/ And for milk... You can use vegetable milks (almond milk, oatmeal milk, coconut milk). Also vegetable creams (soya cream etc). You can even use something called Tofutti (kinda like Philadelphia) which is made of tofu and other stuff, to replace Philadelphia. I can't say these replacements work as well as the traditional thing... But if you do research and find tips and recipes with these products I'm sure you'll find something good I don't make pastry so I can't talk much. BUT I have tried some things, like raw cakes for example, and it's good Edit 1: Found the term for the chickpea water: Aquafaba Edit 2: Recipes I found quickly - Vegan Sfogliatelle http://www.veganblog.it/2011/01/24/sfogliatelle-ricce/ - Vegan Tiramisu Macaronshttps://avocadosandales.com/2015/11/01/vegan-tiramisu-macarons/ - Vegan Tiramisuhttp://www.crazyvegankitchen.com/vegan-tiramisu-that-totes-doesnt-taste-vegan/ - Different vegan pastry tipshttps://www.vegansociety.com/whats-new/blog/13-amazing-things-you-can-do-aquafaba

Try Chili sin carne (with beans instead of meat). I eat a lot and I was full for half day.
