Book 1 is the standard album she's referring to, and Book 3 is the AI album. Book 2 was seemingly an actual booklet and accompanying audio track that we already have, but that's besides the point.

Back in August, she talked about both albums to WIRED, saying:

 

I’m going to slowly release it, a song every three weeks for the next couple of months. Much to everyone’s chagrin, I’m releasing songs I made in the last couple months first. And then, when it’s out ((Book 1)), I want to mentor a bunch of the kids who have been making the Grimes stuff and make a competing AI album. And then have the AI-hive-mind-collective Grimes and the real Grimes face off. I’ve been calling that one Book 3.

apparently Fairies Cum First was supposed to be an EP by a fictional AI artist within the Book 1 "lore"; it existed when there were only Book 1 and Book 2, and I assume the idea morphed directly into her idea for an AI Book 3.

It seems like Shinigami Eyes would've been thrown on the EP, since it's unrelated to her greater concept but her team wanted it as a single

Right? One of the best things about Grimes's early albums is her ethereal Mariah-like dreamy high vocals. She's a great unique vocalist!! But this whole "AI making other artist's songs imitate Grimes's voice" completely eliminates the vocal talent from the equation so it really erases a lot of the magic IMO. 

Maybe I'm the only one who cares about stuff like that because...
