Red Dead Redemption 2 is also so beautiful and atmospheric, I genuinely play it sometimes just to sit by the fire under the stars or watch a thunderstorm.

Try this game: Fenyx: Immortals Rising 

It's basically Breath of the Wild but more creative. The graphics may not be as advanced as some of the games mentioned here, but I'm having a lot of fun with it. It's also filled with Greek mythology if you're interested in that.
