I really want to get into Cher's music but I have no idea where to start cause she has like 163 studio albums

Absolutely agree.

OP, I suggest you skip most of her early albums, it took her a long time to get consistent commercial and critical success when her career started. 

Cher really came into her own during the 70s and 80s with her rock style, and peaked in the 90s/00s with her disco-electro-dance-pop combo, she's the original comeback queen. 

Overall I'd pick these 6 albums:

The Sonny Side of Cher (1966)

Gypsies, Tramps & Thieves (1971)

Cher (1987)

Heart of Stone (1989)

Believe (1998)

Living Proof (2001)

 

Bonus: Closer To The Truth (for pure gay bangers)

 

P.S Check out the many cover versions of 'Bang Bang', even Gaga covered it.

"Heart of Stone" is Cher's best album, imo. Though I'm biased because my mom used to play it a lot when I was a kid.

I'd also suggest listening to Greatest Hits compilations as she has some really songs here and there in the 70s, e.g. Half-Breed, Dark Lady, Take Me Home, Gypsys, Tramps & Thieves

Cher hasn’t really released that many good albums if I’m being totally honest (no shade whatsoever). 

Your best off sticking with Cher (1987), Heart of Stone (1989) and Gypsies, Tramps & Thieves (1971). I might add on All I Really Want To Do (1965) as well.

That’s really all I’d suggest. Some people like Believe, but for me it has aged very poorly and is almost unlistenable at this point.

I love all of Cher’s hits and a collection of other songs I’ve gathered over the years. I really need to dive deep into her discography, though. We love a legend.

She likes to transition into different genres and styles of music as it evolves, and tends to take a break musically for other projects. Her eras span decades rather than an album cycle, so reinventing herself takes longer than most artists. Family and other things get in the way too of course, for example, she divorced her ex-partner Sonny in the 70s, and she put out barely any music back then. But generally her releases come in bouts followed by quietness:

60s - 80s: Folk pop to Rock

80s - 00s: Rock to Disco/Electronic

She did drop a few albums in the 90s though, and 'The Shoop Shoop' song was a big hit. But 'Believe' rocketed her career way past her previous success, and made her famous among every generation.
