I think we only have the 720p version since Fox doesn't broadcast in 1080p or even 4K

Those are upscales. Katy's and Bey's we do have a 1080i/p feed

We don't have a 1080p feed from Gaga's performance, we do have a 720p though.

Yeah I want it in 4k too, I requested Moises who posted Katy's but he is not responding... Katys and Bey are so crystal clear, I want one from Gaga too

So basically they put tons and tons of money and time into this show and then when it comes time to pick a camera to let the world see it they're like... meh lets go with the 720p camera

Yes, the camera is not the problem, the problem is the broadcast. A choice of FOX (Max. 720p).

They shot in 4K (pretty sure they even had some 8K cameras around, as Sports are usually the testing ground for new cameras), but it's all up to the broadcaster how they broadcast it.

They do get the full fat 4K signal, but just scale it down for their network.
FOX produces their own shown in more than 720p for sure.

And the reason why some chose 720p over 1080i / 1080p is just to save bandwidth.
And as we know, Cable bandwidth isn't that great in the US :lana:

So unless we get a Blu Ray or someone snatched a copy from the NFL, we likely won't see the show in anything better than what FOX sends over their network.

But it could be that someone outside of the US recorded it from the station that showed the show in their country, in something better than 720p.
