I've cooked and eaten carbonara many times in my life and I could easily see how vegan carbonara could mimic the taste and texture of carbonara quite realistically. I won't look at you with disgust if you eat meat in front of me or drink milk. I'll just politely decline if offered some. Nobody likes extremists in any capacity. I can't stand the vegans who think veganism is the cure for everything. Got allergies? Go Vegan. Got a cold? Go Vegan. Got a life threatening disease? Go Vegan.
