And they would have to have close contact with your phone, and still not every phone has NFC. The iPhone for example only uses it for ApplePay. I think it's a mix of tracking your face through the store (computer vision), locating where your phone is with Bluetooth and WiFi and sensors who notice which and how many items you've picked in the shelves.
