Her prophecy was to be choked to death by one of her brothers so I assumed Jaime would be the one to do it

The Golden Palace was great, it only got cancelled after one season as it wasn't popular enough, probably because Dorothy wasn't on it. But I don't think it suffered in her absence. So many hilarious moments in this show (including some laugh out loud physical comedy) and some of Rose's best St Olaf stories yet most fans don't want to know or chronicle it. Episode 18 remains my fave. You know the kind of laughing where you're crying? That was me.

It wasn't actually rushed though, Bea Arthur wanted to leave the show for a few years but was convinced to keep going. At the end of season 6, she made the decision season 7 would be her last one, so going into season 7, they all knew it was their final season. It's also why they kind of relished in certain things during season 7 and it's why the live audience was so sentimental and gave bigger cheers and laughs at certain jokes, gags and other things. 

I know but a good ending had to be thought up with that in mind and also to reflect that Bea was leaving. To bring in Leslie Neilson for just that final episode to wind up being the man she marries is rushed when they could easily have made her start seeing someone from the start of the last season and to have it end with them getting married would be so much more substantial. Instead, she was married off to a character who only exists for that final double episode, played by a big name actor to pull in ratings who could only be hired for a one-off appearance. It just felt like it was a case of wanting Dorothy to be married off at the end but instead of planning it in advance (like Rose's long term thing with Miles), she gets a last minute romance tacked in at the tail end. Just didn't seem to befit such a cherished character. And the other girls don't get their happy ending.

The Golden Girls - The finale was good but was one of the most rushed finales in TV history. Without giving too much away, it just seems like the creators wanted a certain ending and didn't care how many new elements they had to add or much they had to shoehorn it into a double episode. And that not every character got the same treatment. Btw, shoutout to spin-off The Golden Palace - don't know know why so many fans act like it doesn't exist, these episodes are brilliant! 

The Golden Palace is SO GOOD! Granted, the series starts pretty weak, but it finally finds its footing a few episodes in. So sad there's only one season.
