Nevertheless, the tour is amazing as it is, so in the end it didn't "need" them.

What I DO miss is a handheld mic during the piano segment, I don't get why she chose not to have one.

It'll be because of where that segment is based in the setlist. 

It's a short set that follows immediately from and goes immediately into performances where a handheld would detract from the performance so I can see why she just opted to keep the headset mic on the whole time

If I'm not wrong the first time she played the guitar was BTW Ball during Electric Chapel.

During that, the guitar was most likely not being played or she only knew minimal technique. I remember her saying she learned/improved on guitar for Joanne era. She played a guitar for a portion of Venus during the artRAVE but I also think it was minimal playing. 

That being said, the way she can work a piano excuses anything she does with a guitar
