I believe the 2020/21 filming schedule went something like this:

Winter 2020: First half of UK 2 - COVID

Summer 2020: US Season 13/All Stars 6

Fall 2020: Second half of UK 2

Winter 2021: Down Under/UK 3/UK Vs. The World (so Rue and Michelle could stay in the UK and bypass the complications that would happen due to COVID). This was why UK3 felt so rushed. I believe while they were filming this, they filmed Spain as well/Holland 2

Spring 2021: Canada 2/Italia (I think...)

For UK, filming in spring and airing in fall/winter is the usual schedule. UK2 filming being delayed kinda screwed things up for its airing. When they returned for filming is when the series usually would've aired.
