I honestly think Chromatica. 

It's sonically forward and has a LOT going on like BTW, combined with ARTPOP's crisp EDM sound.

unpolished is kind of her thing

i guess chromatica bc it feels inorganic so what else is there to do but polish it

Probably The Fame definitely. Joanne is her most 'unpolished' but one of her most quality albums with ASIB and BTW

Chromatica, easily. Joanne was quite polished, too.

Roughest for me was ARTPOP... uneven and a bit all over the place.

Born This Way was also rough but that kind of was the point of it.

Chromatica for sure, the best Gaga album for my ears

The Fame Monster has Dance In The Dark and Telephone one of her most unpolished songs but in comparison with The Fame we had it in our minds as the polished sister of it

Born This Way is unpolished but it’s just perfect as it is, sounding like a timeless and iconic record

ARTPOP and it’s not close.

The production is so meticulously crafted to grab your ear every few seconds, the choices of synths are very quirky and fun, and it constantly switches between relatively stripped back instrumentation and overproduced bliss almost flawlessly.

All her albums are very polished though, but ARTPOP gets the edge because of its ambition and its outstanding execution. TF and TFM are polished but they don’t need to juggle as much as ARTPOP does. Joanne and Chromatica are also very polished but in their case it goes too far, they are way too squeaky clean and sanitized. BTW is the only album I would call messy production-wise, but it adds to its charm.

All of Gaga’s albums are well polished/cohesive besides ARTPOP. 
I’d say it’s a tie between TFM ep and Chromatica. BTW and TF are a close second
