I'm not too familiar with Evangelion (apart from cultural osmosis), but I really love Hideaki Anno's work with Shin Godzilla. I'm kind of familiar with Evangelion's cover artwork, and have always been fond of its high-drama minimalism, emphasized around singular phrases.
