And I can do a Bb4 pretty consistently as a male with a low baritone voice fwiw

I don't think a Bb5 should be hard for any mezzo soprano or soprano as long as they use head voice. I'm not either of those voice parts but it's actually supposed to be easier than singing the F below it because head voice is lighter. It's similar to how singing high in falsetto is easier than it would ever be in chest voice. 

I find it odd at best that more female pop singers don't use head voice. Even Gaga started using it extensively only recently.

Power vocalist just because she can scream?

There's more to it on belting than just scream. The best example of course tenors like Pavarotti (r.i.p) and the likes. What Demi did is scream scream, not singing scream. And she didn't add any emotions to it. It just flat and bland. 

Her voice are irritating to me. I can't stand it. And IDK why. But probably that's why. Combined that with her personality, well....
