They shot the scenes in a way where you couldn't really see her face and as a Gaga stan, I was like "wtf that's not Gaga!"

(I only saw that season once, I really enjoyed it but the ending was AWFUL so I haven't revisited it)

for the last part couldn't that be a stunt double for what the scene involved?

I think she could successfully produce interesting things, especially in a landscape where Selena Gomez is a successful producer. I remember Amy Poehler talked about how producing things is such a an easy thing, you just fund it, and check on it every once and a while. Directing OTOH is much harder, and she hasn't expressed interest in directing again - per her interviews from a month or so ago.

Horror Story has been disappointing lately so I'd be very interested to see them do other things together. For me, Ryan's work is very hit/miss and not very consistent. But he's making money for the gays so werk 

I think that was just one time thing. The directors changed frequently on AHS, and I don't get the impression that she ended on bad terms with AHS, or ended indefinitely because of that - it's more because AHS is likely on its last few seasons (lbr), and she is a busy person.
