I think especially for Joanne you can track down that most songs weren't written on piano, they were written by her on guitar or another co-writer on the guitar. It's a lot easier to play and incorportate complicated chords on the piano, while "easy" chord can also be pretty hard to properly play on the guitar. Playing a G#sus4 chord on the piano is not that hard for beginners if you just know the notes, being able to play F major on guitar with no hiccup is an accomplishment for intermediate guitar players.
