I recently watched an old interview of gaga where she said she had never met amy.. this was after her passing.

I thought she was talking about Michael Jackson. I think she is inspired by Michael Jackson and in a lot of ways has followed in his footsteps with the fame.

But I don't think Gaga and Amy ever met, did they? Why does he keep saying they were friends?

A good visual director, but he knows very little about Gaga. The reference in the doc may be to Amy Winehouse because Mark Ronson had worked with her, but if the director's word is all we got, it's not even clear if Gaga was referring to her (or Princess Diana, or MJ, or...). 

P.S. Gaga often said she went blonde because she was mistaken for Winehouse at Lollapalooza 2007.
