How Did Joanne Standard Skyrocket on iTunes?

Not that uncommon. Album is out, and people now want new music. People generally prefer the cheaper version of something. So standard version skyrockets.

Generally the bulk of sales in music happens in the first week of sales (first 3 days). So the standard edition boosting in a short period makes a lot of sense. The same way it won't be surprising to see one of the versions fall off after a week. Once people know a new album is out, the people that were going to buy it are going to buy it. 

The exception to sales being front loaded, is when an album has huge singles that drive sales over time. So when a single becomes the next big thing and saturates the radio, it penetrates the mainstream markets and gets people interested in seeking out the record that they didn't initially know about or care about. Or things like award shows (where an album winning puts it in the zeitgeist / collective consciousness of the consumer).

Something people need to realize, is that the music charts on iTunes are actually fairly static. When you see the charts for any given month, most days the top 30 selling albums aren't actually selling that much. Again, the bulk of sales is in the first week. That is why when new albums come out, they almost always move up the charts and overtake everything else which isn't actually moving a ton of units on a given day.

Singles is a little different, as consumers are more active buying single songs (so those charts move a lot more then albums).

People in general don't value music anymore at the standard price it's sold at. Deluxe editions are kind of a hard sell, unless it's the price of the original anyways (so the Deluxe is just an incentive to get people to pay for it as opposed to streaming it or downloading illegally).

Consumers generally go with the cheaper option. Always. This has become more true with music. Especially since most consumers don't actually view albums the way they used to (there has been a big shift to singles).

Deluxe sales will mostly be pre-orders, and from her big fans. Casual music listeners and the bulk of iTunes buyers will break for the Standard. Whatever is the cheapest option to get new music.
