 I think you're being a bit extra. It's just the way she sang it, I'm sure if she wasn't so harsh with the vocals (although I think it fits the song and it's emotion, the way she sung it here), it would've been more cohesive and stripped down.

Honestly.. I hate to shade her because I'm so excited about Joanne, but... 

She's always struggled singing/playing piano at the same time. She gets so passionate with her vocals that she often hits wrong notes and just smashes her fingers into the keys. You can hear her jumping back and forth between chords because she hit the wrong one in almost every live performance she's ever done. It's rare to hear her perfectly perform a song all the way through. It annoys me too, but it's a pretty standard thing for her.
