Yes that is a knife, she scalped that guy, so she has his scalp in her other hand  bottom left looks like more hair to me and she's probably covered in leaves and twigs because of the forest

Most of what you are pointing at is her hair. There are leaves in there as well, and she is holding a scalp of a man.

But other than that, I can't tell what the rest is

I would wait and see with this episode this week since more of Gaga's character is going to be shown.

"what's this?" - scalped head (Hair) on a Stick

Gaga is dressed in fawn skins and carry a thyrsus, a long stick wrapped in ivy or vine leaves and tipped with a pine cone. She wears a brown wig and weave ivy-wreaths around her head with a skeleton of an animal. 

Her dress is white and she wears a light brown corset.

Thanks! The only thing I'm not really sure about right now is the stick with the scalped head. I mean, she's holding the scalped skin and then the stick is glued to it, hanging or something? 

It's like this 

but if she was holding some kind of walking stick she would hold it like this

I don't think she is wearing the stick in this scene.

That's not a stick, it's a fold of her dress.
