If you watch season 5 without watching 1 and 3 you might be a little confused. I watched Coven first (3), then Asylum (2) then Murder House (1) before watching S4 then S5. The only connections the seasons have are subtle ones, e.g. a character from S2 appears in S4, a character from S1 appears in S5. You should be able to watch a full season without needing to watch the others, especially if you're watching 1,2, and 3 (I know you're just watching 5, lol). But since you're not into the franchise then you can go ahead and just watch season 5, you'll still get the plot. Season 5 had the most connections for the ratings anyway, imo. There are some casting gags you'll pick up one if you watch all the seasons, but that's about it. Some character do reappear but it won't ruin much of the storyline.
