Gaga's best scene in AHS: Hotel (acting-wise)?

I think her acting in the second to last episode was her best, with the scene where she helps Liz first transform being the second best. Though the later seemed very Gaga.

Her acting fluctuated but her talent really shone in some scenes.

The scenes between her and Matt always tended to be her best. The scene where she kicks him to the curb is just incredible, especially after quite a wooden beginning. That probably remains one of my favourite scenes of the whole season. Their encounter after the Hotline Bling moment is fantastic too. "He MADE ME! He made me everything I am!". Gives me chills. 

Her monologue at the beginning of 5x09 is amazing too. The whole of Flicker showcases her diversity too. She really shone when she displayed emotion. I liked The Countess, but her numbness to everything restricted Gaga's ability to really show off her skills.

Agreed. Her acting was a bit spotty (understandable, since this is her debut role) but she had her moments of brilliance. Her scene with Matt after the Hotline Bling moment was one of her best scenes imo. She handled it like a seasoned actress.

- The scene where she saw Tristan dead and also afterwards going to the hotel crying

- When she was shot by Iris and Liz and later by John 

- The part when Sally took the bullets out of her body and she was screaming 

- When her kids agreed to give her their blood in order to survive

I don't know why but she shows so many acting skills when suffering.

I don't remember what episode it is but there is one that opens with her looking with a furious and sad face to that empty hall where Valentino was trapped in and just the look at her eyes gave me CHILLS.

A lot of her scenes post-episode 5 were pretty good. I know it took Gaga a few scenes to feel herself flesh out the character, but I also feel like The Countess was written more multi-dimensionally after the flashback scene with Liz. Any of her monologues are a standout, tbh, with special notes to

But there are quite a few scenes later in the season that I love as well, like her scenes with Sally in episode 11.

It was the first indication of this crazy depth of the character. Also, Flicker is a big highlight, not just for Gaga but for the whole season.

Exactly. Nothing comes close, except maybe the scene with Sally due to its raw emotion.

When she found out Valentino was behind the wall

"that's what was BACK THERRRRRRRREEEEE!!!"

The entire Flicker episode, the dance scene with Rudolph and Natacha Rambova.

 

When she reminisced her past with Tristan in one of the earlier episodes.

When she broke down in anguish after witnessing Valentino's death.

The Hotline Bling scene with Donovan.

Her scene with Sally, her screams when she was removing the bullets from Gaga.

When she told Liz Taylor that she was her fondest creation.

When she couldn't do anything after knowing that she's stuck in eternity with Evan Peters (the dinner scene of episode 11).

Hotline Bling scene with Matt Bomer

and the Liz transformation scene

I also liked her performance with Sarah Paulson when she was healing, it's a shame that the relationship she had with her kids wasn't really heartwarming cause she basically ignored them the whole season and didn't even noticed that one died, otherwise it could have been a very powerfull moment worthy of a Emmy nom.
