Writing lyrics that require critical thinking to understand isn't necessarily "safe" or "sugarcoating." Things like allusions, metaphors, and euphemisms are common writing techniques, and they require a higher level of creativity than simply being blunt in stating one's desires and experiences. Writing lyrics that require critical thinking to understand is one thing. Writing sugar-coated lyrics so you won't disappoint your little fans and their parents so you can keep them is another thing. That lyrics of Taylor is on a level where it just depends on someone's perspective or whether they have a dirty mind or not to think of it as s-xual. 

There are many songs that use allusions, metaphors, and euphemisms in their lyrics, but they're not sugar-coated like that.
