I understand the Gaga and Whitney ones (wrong usage of me and I) but the Katy and Taylor ones just seem kinda sloppy. What's the actual error in them?

​It should be "You and I could write a bad romance." In the original lyrics, without "you and," we are left with "me could write a bad romance." That's obviously not grammatically correct.
