Basically they act as the middleman to organize and negotiate "jobs" for their clients. So say ABC wants to do a Muppet Thanksgiving Special, and they want Gaga, they would call her agent and discuss all the business of that (or, if Gaga was looking to do something like that, her agent could reach out to people as well). Or say a director like Bradley wanted Gaga for a movie, he would call her agent to set up a meeting. Christian would have handled all the business negotiations with MGM for setting up Enigma (how much money, how many dates etc). They also look for opportunities for their clients, like if Gaga said 'I want to start doing TV', they would network and make calls and put out feelers for interest. Then when Ryan Murphy hires her for AHS he would negotiate the contract. He surely has an office, he works for a huge agency (CAA), but probably can do most of his work with a laptop and a phone.
