“Everything” is referring to her relationship as well as the concept of “completeness/highly regarded”. 

Like how people will post “That outfit is everything”. 

If everything (relationship) was everything (amazing), but everything is over.

I always interpreted it as, if everything they had together was really everything but that was all over then maybe everything they had, could have really been everything they needed if only they were older and more mature. 

So if their relationship was really everything they had and needed but that was all over then maybe they would have been happy with what they had before if only they were more mature and older

Basically this. 

Shes basically saying that if the relationship was as “all consuming” and “special” as they are supposed to be, then it would have lasted, but it didn’t. And she asked if maybe it would have if they had found eachother when they were older.
