I can't name the narrative device they're using, but the idea is that at first you just sort of see 'hints' about what's going on - little snapshots that aren't obviously related - and then at the end you see everything in chronological order. If you watch the movie "Wild" (with Reese Witherspoon, based on the book of the same name), they use this device as well. That's just one of many examples. The point is that things are kind of confusing and abstract at first, but then you get the full picture later and you have that sort of "ah-ha" moment when everything falls into place. It's intentional, it's done in movies and tv shows a lot when they don't want to give everything away at first, so they show bits and pieces before showing the full event of how someone got to a specific place. Gaga didn't want to show who the people coming for her were at first, and it goes along with story, it shows it's her girlfriends who comfort her and bring her to a studio. And then with the gift, it's also to surprise the viewer as to what the gift is and to go along with the story of the song. It's just a technique that is used purposely.
