I'm assuming Mark meant from an instrument production standpoint that we are using mostly "real" instruments, which as some people pointed out can also include old school synths. Realistically what it means is human players rather than dragging instrument samples around in Logic and setting up drum loops. And of course Mark may not be talking about the entire album, but it wouldn't surprise me if Gaga wants to be consistent. Analog could also mean using a full analog recording stack to tape instead of Pro Tools or Logic. That seems less likely though, although it would be awesome IMO to be able to buy a Gaga LP in Vinyl sourced from analog master tapes. Music Geek me would be in overload. Also Remember that up until like 10 years ago "Dance Music" didn't mean EDM, "Pop" didn't mean electro-pop, and the vast majority of the greatest pop music through history has been made by talented vocalists and musicians using "real" instruments. I think it'll be refreshing to have real instruments; synths and other digital sounds often come from a huge bank of samples that are just recycled and edited, but with instruments you have to do everything from scratch. This album isn't necessarily going to be all ballads, but will be more authentic with live instruments. The thought of her doing something like Le Freak or Donna Summer's disco songs, is amazing to me. And after all - this is Gaga, she's always going to be a dance pop artist in her roots, but she's just diversifying. I entirely trust her, and I can't wait to hear it.
