I don't think that's an accurate explanation. It sounded like Demi got tired trying to clarify her gender and correct people, so she gave up trying to make it stick. 

She said she's gender fluid but has more feminine days, so she/her made the most sense. But that doesn't negate her being non-binary

And that says more about the culture than it does Demi

Oh this!! Thank you for putting it into words. I do the same with my sexuality. I'm bisexual, buy sometimes it's easier to just say I'm gay or I'm queer because I don't always feel like explaining myself.

I think Demi's gender identity was an issue of self-esteem and an expression of non-conformity triggered by that (and also triggered by a desire to actually want to meet 'beauty standards' but not being able to). As soon as she lost weight, she's back to being hyper-feminine - more feminine than she has ever been. I don't believe she was ever 'non-binary' - I believe she was looking for a label that helped her escape the need to conform, and a label that came with social capital. Now she doesn't need that label - because she's conforming like never before (thanks to weight loss injections). Just my view.
